This year, for the first time, we are importing HISTORIVM : an olive oil from Sicily that we have chosen to bring to our MORI's Gourmet grocery store. It comes from a single location, a single plot of land, and olive trees that are among the oldest on the island.
A unique plot of land on the slopes of Monte Erice
HISTORIVM originates from the Fondo Emanuela plot, on the slopes of Monte Erice in western Sicily. It is a high-altitude terroir, exposed to the winds and bathed in the light of the Trapani coast. The oil bears this mark: it captures the aromas of the Sicilian soil.
Olive trees between 500 and 1,200 years old
What distinguishes this plot is its trees. The olive trees of Fondo Emanuela are between 500 and 1,200 years old. They are native Sicilian cultivars, cared for and preserved throughout the year.
These trees do not produce in large quantities. Their age, their root system and the nature of the soil result in a rare fruit, harvested with care.
A medium to intense fruitiness, picked at the right time
The olives are picked at a precise moment of their ripeness. From this harvest comes an oil of a brilliant green with golden highlights, with a medium to strong fruitiness.
This is an oil with character, to be reserved for uses where it can express itself: drizzled raw over fish, over seasonal vegetables, or simply on bread.
Heat is not its element; it delivers the most flavor when raw.
