Our Passere alle vongole is in Figaro's selection of 50 cult dishes
Figaro Scope has just published its selection of 50 iconic dishes that everyone in Paris must try at least once in their life. A demanding list, it includes both top-tier restaurants and neighborhood bistros that have become institutions. Among them is an address in the 2nd arrondissement: Mori Venice Bar , and its Passere alle vongole.
A simple dish, a requirement at every moment
Vongole is one of the iconic dishes of Venetian cuisine. A seemingly simple recipe that demands no compromise on the quality of the ingredients.
Here, they are prepared al cartoccio— en papillote, as has always been done on the shores of the lagoon — with Rustichella linguine, artisanal pasta from Abruzzo produced through a long process of 40 to 60 hours, dried at low temperature and extruded through bronze dies. The result: a pasta that clings to the sauce, dense and vibrant on the palate.
The clams, meanwhile, are sourced from shore fishing, selected as part of our sustainable approach and our Ecotable commitment. And to complete the picture, a few shavings of Sardinian mullet bottarga add their incomparable, briny, marine depth.
Two ways to enjoy it
Whether you wish to experience it in the restaurant's dining room — opposite the Bourse, in the heart of Paris — or enjoy this dish at home or in the office, we offer you two options.
You can reserve your table at Mori Venice Bar and also order online from our MORI's.Paris grocery store. The dish has been specially adapted for delivery, with all our tips for reheating and enjoying it in the best possible conditions.
